Mejadra – A Great Fall Dish!
Sometimes the simplest ingredients make the most satisfying and nutritionally sound dishes. Being foodies as well as holistic nutritionists at The Wellspring School, we are always looking for new recipes to try out and share with our students because we believe that good food can taste great! We want everyone to be as excited about food as we are and we think this is an important component of working in the field of holistic nutrition.
One of Rylen’s current favorite cookbook is “Jerusalem: A Cookbook,” by Yotam Ottolenghi and Sami Tamimi. She gave a copy to Rachael who’s been reading herself to sleep with visions of rich spices, legumes, figs, almonds and more dancing through her head and waking up very hungry!
We couldn’t resist trying out one of these incredible recipes, Mejadra, in a recent Introduction to Wholistic Nutrition class to show how a few wonderful spices can transform lentils and rice into an outstanding meal that provides excellent nutrition via a very tasty recipe. This is a great dish for fall with its warm spices and onions, although we’d eat it anytime. We just had to share. Yum!
